Sausage Chorizo Leek Hash with Fried Eggs

The perfect breakfast or brunch dish, this sausage chorizo leek hash is packed with flavor and protein. It's also a great way to use up leftover sausage or chorizo.

Ingredients

* 1 pound potatoes, peeled and diced
* 1/2 pound sausage, cooked and crumbled
* 1/2 pound chorizo, cooked and crumbled
* 1 large leek, cleaned and thinly sliced
* 1/2 onion, chopped
* 2 cloves garlic, minced
* 1 teaspoon dried oregano
* 1 teaspoon ground cumin
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 4 eggs
* 1 tablespoon olive oil

Instructions

1. Heat the olive oil in a large skillet over medium heat.
2. Add the potatoes to the skillet and cook until browned on all sides.
3. Add the sausage, chorizo, leek, onion, and garlic to the skillet. Cook until the vegetables are softened and the sausage and chorizo are heated through.
4. Stir in the oregano, cumin, salt, and pepper.
5. Make four wells in the hash and crack an egg into each well.
6. Cook the eggs to your desired doneness.

Tips

* For a crispier hash, cook the potatoes in a single layer in the skillet.
* If you don't have cooked sausage or chorizo on hand, you can use raw sausage or chorizo and cook it in the skillet before adding the other ingredients.
* You can add other vegetables to the hash, such as bell peppers, mushrooms, or zucchini.
* Serve the hash with your favorite breakfast sides, such as toast, fruit, or yogurt.
