Charred Spring Onion, Chilli & Feta Flatbreads

These charred spring onion, chilli & feta flatbreads are the perfect quick and easy weeknight meal. They're made with a simple flatbread dough that's topped with charred spring onions, chilli, and feta cheese. The flatbreads are then grilled until they're slightly charred and bubbly.

Ingredients

* For the flatbread dough: * 2 cups (250g) plain flour, plus extra for dusting * 1 teaspoon baking powder * 1/2 teaspoon fine sea salt * 1 tablespoon olive oil, plus extra for greasing * 125ml warm water * For the topping: * 1 bunch of spring onions, trimmed and thinly sliced * 1 red chilli, finely chopped * 150g feta cheese, crumbled * Olive oil, for drizzling

Instructions

1. To make the flatbread dough, place the flour, baking powder, and salt in a large bowl. Add the olive oil and rub it into the flour until it resembles fine breadcrumbs. 2. Add the water gradually, mixing until a dough forms. Knead the dough for a few minutes until it's smooth and elastic. Place the dough in a lightly oiled bowl, cover it with cling film, and leave it to rise in a warm place for 30 minutes. 3. Preheat a griddle or frying pan over medium heat. 4. Divide the dough into 8 pieces. Roll out each piece of dough into a thin circle. 5. Heat a little olive oil in a frying pan and cook the spring onions for 2-3 minutes, or until they're slightly charred. Remove from the heat and set aside. 6. Place a flatbread on the hot griddle or frying pan. Cook for 1-2 minutes, or until the underside is golden brown and bubbly. Flip the flatbread over and cook for a further 1-2 minutes, or until the other side is also golden brown and bubbly. 7. Remove the flatbread from the heat and spread with the charred spring onions, chilli, and feta cheese. Drizzle with olive oil and serve immediately.

Tips

* You can use any type of flour you like to make the flatbreads. I used plain flour, but you could also use wholemeal flour or spelt flour. * If you don't have a griddle or frying pan, you can cook the flatbreads on a baking sheet in the oven. Preheat the oven to 220°C (425°F) and cook the flatbreads for 10-12 minutes, or until they're golden brown and bubbly. * You can add any other toppings you like to the flatbreads. Some other good options include: * Sliced tomatoes * Sliced peppers * Cooked chicken or lamb * Grated mozzarella cheese
