Christmas Dinner Traybake: A Festive and Easy Way to Feed a Crowd

Ingredients

* 1 kg potatoes, peeled and cubed
* 500g parsnips, peeled and cubed
* 500g carrots, peeled and chopped
* 250g Brussels sprouts, trimmed and halved
* 1 onion, peeled and chopped
* 1 tbsp olive oil
* Salt and pepper to taste
* 1 kg turkey breast, boned and diced
* 1 kg pork loin, diced
* 1 tbsp mixed herbs
* 1 tbsp plain flour
* 500ml chicken stock
* 150ml red wine
* 1 tbsp cranberry sauce

Instructions

1. Preheat the oven to 180°C (160°C fan/gas 4).
2. In a large bowl, toss the potatoes, parsnips, carrots, Brussels sprouts, and onion with the olive oil, salt, and pepper.
3. Spread the vegetables out on a large baking tray.
4. In a separate bowl, combine the turkey, pork, mixed herbs, and plain flour.
5. Scatter the meat over the vegetables.
6. In a jug, whisk together the chicken stock, red wine, and cranberry sauce.
7. Pour the sauce over the meat and vegetables.
8. Roast in the preheated oven for 1 hour 30 minutes, or until the meat is cooked through and the vegetables are golden brown.
9. Serve immediately.

Tips

* For a crispy traybake, roast the vegetables on a high heat for the last 15 minutes.
* If you don't have a large baking tray, you can divide the ingredients between two smaller trays.
* You can add other vegetables to your traybake, such as sweet potatoes, butternut squash, or cauliflower.
