Spinach, Chilli and Bean Pide: A Flavorful Turkish Delight
Pide is a traditional Turkish flatbread that is a staple in Turkish cuisine. It is typically made with a simple dough and filled with a variety of ingredients, such as meat, vegetables, or cheese. One popular variety of pide is spinach, chilli and bean pide, which is a delicious and nutritious dish.
Ingredients:
For the dough:
* 500g plain flour
* 1 teaspoon salt
* 1 teaspoon sugar
* 1 teaspoon instant yeast
* 250ml warm water
For the filling:
* 500g spinach, chopped
* 1 onion, chopped
* 1 red chilli pepper, chopped
* 1 can (400g) kidney beans, drained and rinsed
* 1 tablespoon olive oil
* 1 teaspoon ground cumin
* Salt and black pepper to taste
Instructions:
1. To make the dough, combine the flour, salt, sugar and yeast in a large bowl. Add the warm water and mix until a dough forms.
2. Knead the dough for 5-10 minutes until it is smooth and elastic. Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for 1 hour, or until doubled in size.
3. While the dough is rising, make the filling. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened. Add the chilli pepper and cook for 1 minute more.
4. Add the spinach to the skillet and cook until wilted. Drain any excess liquid.
5. Add the kidney beans, cumin, salt, and black pepper to the skillet. Stir to combine and cook for 5 minutes, or until heated through.
6. Preheat the oven to 220°C (425°F).
7. Punch down the dough and divide it into two equal pieces. Roll out each piece of dough into a thin oval shape.
8. Spread the spinach and bean filling onto one half of each oval. Fold the other half of the dough over the filling and press down to seal the edges.
9. Place the pides on a greased baking sheet and bake for 15-20 minutes, or until golden brown.
10. Serve hot with your favorite toppings, such as yogurt, hummus, or salsa.
Tips:
* You can use any type of greens for this recipe, such as spinach, kale, or chard.
* Add other vegetables to the filling, such as mushrooms, zucchini, or bell peppers.
* If you don't have any kidney beans, you can use another type of canned beans, such as black beans or pinto beans.
* Serve the pide with a side salad or soup for a complete meal.
