Pineapple Chilli Glazed Gammon

Gammon, a cured pork leg, is a versatile cut of meat that can be cooked in many ways. One of the most popular methods is to glaze it with a sweet and sticky sauce, such as pineapple chilli glaze. This glaze adds a delicious flavour to the gammon and helps to keep it moist during cooking.

Ingredients:

* 1 gammon joint (4-5kg)
* 1 pineapple, peeled and diced
* 1 red chilli, finely chopped
* 1 onion, finely chopped
* 1 garlic clove, crushed
* 2 tbsp brown sugar
* 2 tbsp honey
* 1 tbsp soy sauce
* 1 tsp ground ginger
* 1 tsp ground cloves
* 1/2 tsp black pepper
* 1/4 tsp salt

Instructions:

1. Preheat oven to 180°C (160°C fan-forced).
2. Score the skin of the gammon in a diamond pattern.
3. Place the gammon in a large roasting tin.
4. In a bowl, combine the pineapple, chilli, onion, garlic, brown sugar, honey, soy sauce, ginger, cloves, black pepper, and salt.
5. Pour the glaze over the gammon, making sure to cover the skin.
6. Roast for 1 hour and 30 minutes, or until the internal temperature reaches 70°C.
7. Remove from the oven and let rest for 15 minutes before carving.

Tips:

* For a sweeter glaze, add more brown sugar or honey.
* For a spicier glaze, add more chilli.
* If the glaze starts to burn, cover the gammon with foil.
* Serve with your favourite sides, such as roast potatoes, Yorkshire pudding, or apple sauce.

Variations:

* Add other fruits to the glaze, such as mango or apricot.
* Use a different type of chilli, such as jalapeño or habanero.
* Add a splash of white wine or cider to the glaze for extra flavour.
