Spicy Prawn, Fennel, and Chickpea Stir-Fry

This hearty and flavorful stir-fry combines the bold flavors of spicy prawns, aromatic fennel, and nutritious chickpeas to create a delectable dish that is sure to satisfy.

Ingredients:

* 1 pound medium prawns, peeled and deveined
* 1 tablespoon olive oil
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/2 teaspoon smoked paprika
* 1/4 teaspoon ground cumin
* 1/4 teaspoon ground coriander
* 1/2 onion, thinly sliced
* 1 fennel bulb, thinly sliced
* 1 (15-ounce) can chickpeas, rinsed and drained
* 1/4 cup chopped fresh parsley

Instructions:

1. In a medium bowl, combine the prawns, olive oil, salt, pepper, smoked paprika, cumin, and coriander. Toss to coat.
2. Heat a large skillet or wok over medium-high heat. Add the prawns and cook for 2-3 minutes per side, or until pink and opaque throughout. Transfer to a plate and set aside.
3. Reduce heat to medium and add the onion and fennel to the skillet. Cook, stirring occasionally, until softened, about 5 minutes.
4. Add the chickpeas to the skillet and cook for an additional 2-3 minutes, or until heated through.
5. Return the prawns to the skillet and stir to combine. Cook for 1 minute more, or until warmed through.
6. Stir in the parsley and serve immediately.

Tips:

* For a spicier stir-fry, add an additional 1/4 teaspoon of smoked paprika or a dash of cayenne pepper.
* If you don't have fresh fennel, you can substitute 1/2 cup of thinly sliced celery.
