Broken Lasagna with Courgette, Pea, and Mint

Broken lasagna is a delicious and easy-to-make dish that is perfect for a weeknight dinner. It is made with broken lasagna noodles, courgette, peas, mint, and a simple tomato sauce.

Ingredients:

* 12 lasagna noodles, broken into pieces
* 1 tablespoon olive oil
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 (28-ounce) can crushed tomatoes
* 1/2 cup water
* 1 teaspoon dried oregano
* 1/2 teaspoon dried basil
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1 cup grated Parmesan cheese
* 1/2 cup chopped fresh courgette
* 1/2 cup frozen peas
* 1/4 cup chopped fresh mint

Instructions:

1. Preheat oven to 375 degrees F (190 degrees C).
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened.
3. Stir in crushed tomatoes, water, oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes, or until the sauce has thickened.
4. Spread 1 cup of the sauce in the bottom of a 9x13-inch baking dish.
5. Top with broken lasagna noodles, courgette, peas, and half of the Parmesan cheese.
6. Pour the remaining sauce over the top.
7. Sprinkle with remaining Parmesan cheese and mint.
8. Bake for 20 minutes, or until the lasagna is bubbly and the cheese is melted.
9. Let stand for 10 minutes before serving.
