Butternut Squash and Cherry Tomato Crumble

Butternut squash and cherry tomato crumble is a delicious and hearty dish that is perfect for a fall meal. The combination of sweet butternut squash, tangy cherry tomatoes, and crunchy crumble topping creates a flavor profile that is both satisfying and comforting. This dish is also relatively easy to make, making it a great option for busy weeknights.

Ingredients:

For the squash:

* 1 butternut squash, peeled and cubed
* 1 tablespoon olive oil
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper

For the tomatoes:

* 1 pint cherry tomatoes
* 1 tablespoon olive oil
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper

For the crumble topping:

* 1 cup all-purpose flour
* 1/2 cup sugar
* 1/2 cup rolled oats
* 1/2 cup chopped walnuts
* 1/4 cup butter, cold and cut into small cubes

Instructions:

1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, combine the butternut squash, olive oil, salt, and black pepper. Toss to coat.
3. Spread the squash in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
4. While the squash is roasting, prepare the tomatoes. In a medium bowl, combine the cherry tomatoes, olive oil, salt, and black pepper. Toss to coat.
5. Remove the squash from the oven and add the tomatoes to the baking sheet. Roast for an additional 10-15 minutes, or until the tomatoes are softened and starting to burst.
6. While the squash and tomatoes are roasting, prepare the crumble topping. In a medium bowl, combine the flour, sugar, oats, walnuts, and butter. Use your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
7. Remove the squash and tomato mixture from the oven and spread in a 9x13 inch baking dish. Sprinkle the crumble topping evenly over the squash and tomatoes.
8. Bake for 20-25 minutes, or until the topping is golden brown and the squash and tomatoes are heated through.
9. Let cool for a few minutes before serving.

Tips:

* For a sweeter crumble, use brown sugar instead of white sugar.
* For a more savory crumble, add a tablespoon of grated Parmesan cheese to the topping.
* If you don't have walnuts, you can substitute another type of nut, such as pecans or almonds.
* This dish can be served as a main course or a side dish. It is also a great option for a potluck or holiday meal.
