Tom Kerridge: Welcome to The Joy of Cooking podcast. I'm Tom Kerridge, and I'm here with my friend and fellow chef Mark Sargeant. Today, we're going to be talking about the importance of finding joy in cooking.

Mark Sargeant: Thanks for having me, Tom. I'm really looking forward to this conversation.

Tom Kerridge: So, Mark, what does finding joy in cooking mean to you?

Mark Sargeant: For me, it's all about connecting with others and bringing people together. I love cooking for my family and friends, and seeing the joy it brings them. It's also a way for me to express myself creatively.

Tom Kerridge: I agree completely. Cooking is such a great way to connect with others. I love hosting dinner parties and seeing my guests enjoying the food I've made. It's also a way for me to learn new things and challenge myself. I'm always experimenting with new recipes and techniques.

Mark Sargeant: That's great. I think it's important to never stop learning and growing as a chef. There's always something new to discover.

Tom Kerridge: Absolutely. And cooking can also be a way to relax and de-stress. I find it really therapeutic to spend time in the kitchen, chopping vegetables and cooking a meal.

Mark Sargeant: Me too. I think cooking can be a great way to escape from the stresses of everyday life.

Tom Kerridge: So, what are some of your favorite things to cook?

Mark Sargeant: I love cooking simple, rustic dishes that use fresh, seasonal ingredients. I also enjoy cooking international cuisine. I'm always trying to learn new recipes and techniques from different cultures.

Tom Kerridge: Me too. I love traveling and trying new foods. It's a great way to expand your culinary horizons.

Mark Sargeant: Absolutely. And it's also a great way to connect with different cultures.

Tom Kerridge: So, what advice would you give to people who want to find more joy in cooking?

Mark Sargeant: My advice would be to start by cooking simple dishes that you enjoy. Don't be afraid to experiment and try new things. And most importantly, don't be too hard on yourself. Cooking should be enjoyable, so relax and have fun.

Tom Kerridge: That's great advice. Thank you, Mark.

Mark Sargeant: You're welcome, Tom. It's been a pleasure talking to you.
