Spinach Cheese Pide: A Delectable Turkish Delicacy

Spinach cheese pide is a traditional Turkish flatbread that combines the flavors of spinach, cheese, and a flaky dough. It is a popular street food and is often served as a snack or as a main dish.

Ingredients:

* 2 cups all-purpose flour
* 1 teaspoon salt
* 1 teaspoon sugar
* 1 cup warm water
* 1 tablespoon olive oil

For the filling:

* 1 pound fresh spinach
* 1 onion, finely chopped
* 1 garlic clove, minced
* 1 cup crumbled feta cheese
* 1/2 cup grated cheddar cheese
* 1/4 cup chopped fresh parsley
* Salt and pepper to taste

Instructions:

1. In a large bowl, combine the flour, salt, and sugar. Add the warm water and olive oil and stir until a dough forms. Knead the dough for 5-7 minutes until it becomes smooth and elastic. Cover the dough and let it rest for at least 30 minutes.
2. While the dough is resting, make the filling. Wash the spinach thoroughly and chop it. In a skillet, sauté the onion and garlic in a little olive oil until softened. Add the spinach and cook until wilted. Season with salt and pepper.
3. In a bowl, combine the spinach mixture, feta cheese, cheddar cheese, and parsley. Mix well.
4. Preheat the oven to 400°F (200°C).
5. Divide the dough into 8 equal pieces. Roll out each piece into a circle about 12 inches in diameter.
6. Place a scoop of the filling in the center of each circle. Fold the edges of the dough over the filling and press to seal.
7. Transfer the pides to a baking sheet lined with parchment paper. Brush the tops with olive oil.
8. Bake for 20-25 minutes, or until the dough is golden brown and the cheese is melted and bubbly.
9. Serve the spinach cheese pides hot with your favorite dipping sauce.
