Ingredients:

* 1 pound boneless lamb shoulder, cut into 1-inch cubes
* 1 tablespoon olive oil
* 1 onion, chopped
* 2 carrots, chopped
* 2 celery stalks, chopped
* 3 cloves garlic, minced
* 1 teaspoon dried thyme
* 1 teaspoon dried rosemary
* 1/2 cup red wine (optional)
* 2 cups beef broth
* 1 cup water
* 1 pound potatoes, peeled and cut into 1-inch cubes
* 1 cup frozen peas
* Salt and pepper to taste

Instructions:

1. In a large Dutch oven or pot, heat the olive oil over medium heat.
2. Brown the lamb cubes in the hot oil in batches, working in batches to avoid overcrowding the pan.
3. Remove the lamb from the pot and set aside.
4. Add the onion, carrots, celery, and garlic to the pot and cook until softened, about 5 minutes.
