Instructions

1. Preheat a grill or grill pan over medium heat. 2. In a large bowl, combine the feta cubes, olive oil, oregano, thyme, salt, and pepper. Toss to coat. 3. Grill the feta cubes for 5-7 minutes per side, or until golden brown and crispy. 4. While the feta is grilling, make the sauce. In a large saucepan, combine the butter beans, tomatoes, onion, garlic, tomato paste, sugar, basil, red pepper flakes, salt, and pepper. Bring to a simmer over medium heat. Reduce heat to low and simmer for 10-15 minutes, or until the sauce has thickened. 5. Add the grilled feta cubes to the sauce and stir to combine. Simmer for 5 minutes more, or until the feta is heated through. 6. Serve the crispy grilled feta and saucy butter beans over crusty bread. Enjoy!
