Charred Onion and Whipped Feta Flatbreads

Charred onion and whipped feta flatbreads are a delicious and easy-to-make appetizer or light meal. They are made with a simple flatbread dough that is topped with charred onions, whipped feta cheese, and fresh herbs.

Ingredients:

* For the flatbread dough:
* 1 cup (120g) all-purpose flour
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
* 1/2 cup (120ml) warm water
* 1 tablespoon olive oil
* For the charred onions:
* 1 large onion, thinly sliced
* 1 tablespoon olive oil
* Salt and pepper to taste
* For the whipped feta:
* 1 cup (225g) feta cheese
* 1/4 cup (60ml) heavy cream
* 1 tablespoon olive oil
* 1/4 teaspoon dried oregano
* Salt and pepper to taste
* For topping:
* Fresh herbs (such as basil, parsley, or chives)

Instructions:

1. Make the flatbread dough: In a large bowl, whisk together the flour, baking powder, and salt. Add the warm water and olive oil and stir until a dough forms. Knead the dough on a lightly floured surface for a few minutes until it is smooth and elastic. Form the dough into a ball, cover it with plastic wrap, and let it rest for at least 30 minutes.
2. Char the onions: Preheat a grill or grill pan over medium-high heat. Brush the onion slices with olive oil and season with salt and pepper. Grill the onions for 5-7 minutes per side, or until they are charred and softened.
3. Make the whipped feta: In a food processor, combine the feta cheese, heavy cream, olive oil, oregano, salt, and pepper. Process until smooth and fluffy.
4. Assemble the flatbreads: Preheat oven to 450 degrees F (230 degrees C). Divide the dough into 4 equal pieces. Roll out each piece of dough into a 12-inch circle. Spread a thin layer of whipped feta on each circle, leaving a 1-inch border. Top with the charred onions and fresh herbs.
5. Bake the flatbreads: Transfer the flatbreads to a baking sheet and bake for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
6. Serve: Cut the flatbreads into wedges and serve warm.

Tips:

* For a vegan version, use plant-based milk instead of heavy cream in the whipped feta.
