Porcini Loaf with Summer Greens: A Taste of the Season

Ingredients:

For the Porcini Loaf:

* 1 pound (450 grams) all-purpose flour
* 2 teaspoons active dry yeast
* 1 teaspoon sugar
* 1-1/2 cups (360 milliliters) warm water
* 1 tablespoon olive oil
* 1/2 cup (60 grams) dried porcini mushrooms
* 1/2 cup (120 grams) warm water

For the Summer Greens:

* 1 bunch (1 cup) baby spinach
* 1 bunch (1 cup) arugula
* 1 bunch (1/2 cup) basil
* 1/2 cup (120 milliliters) olive oil
* 1/4 cup (60 milliliters) balsamic vinegar
* Salt and pepper to taste

Instructions:

For the Porcini Loaf:

1. In a small bowl, combine the dried porcini mushrooms with the warm water. Let stand for 15 minutes, or until softened.
2. In a large bowl, whisk together the flour, yeast, and sugar. Add the warm water, olive oil, and porcini mushroom mixture. Stir until a dough forms.
3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
4. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.

For the Summer Greens:

1. In a large bowl, combine the spinach, arugula, and basil.
2. Whisk together the olive oil, balsamic vinegar, salt, and pepper in a small bowl.
3. Pour the dressing over the greens and toss to coat.

Assembly:

1. Preheat oven to 375°F (190°C).
2. Punch down the risen dough and divide it into two equal parts.
3. On a lightly floured surface, roll out each part of the dough into a 12x8-inch (30x20-centimeter) rectangle.
4. Spread half of the greens mixture over one of the rectangles.
5. Roll up the rectangle from one long side to the other, starting with the edge with the greens.
