* 1 medium onion, chopped
* 2 cloves garlic, minced
* 1 tablespoon grated fresh ginger
* 2 teaspoons ground cumin
* 1 teaspoon ground coriander
* 1 teaspoon ground turmeric
* 1/2 teaspoon red chili powder (adjust to taste)
* 1 (15-ounce) can diced tomatoes
* 1 cup beef broth
* 2 medium potatoes, peeled and cubed
* 2 ripe bananas, sliced
* 1/2 cup cashews
* Salt and black pepper to taste

For the Cashew Rice:

* 1 cup basmati rice
* 1 tablespoon vegetable oil
* 1/2 cup cashews, chopped
* 1/4 cup chopped cilantro

Instructions:

1. Prepare the Beef Curry:
* In a large skillet, heat the vegetable oil over medium heat.
* Add the beef and cook until browned on all sides. Remove the beef from the skillet and set aside.
* Add the onion, garlic, and ginger to the skillet and cook until softened, about 5 minutes.
* Stir in the cumin, coriander, turmeric, and chili powder. Cook for 1 minute, or until the spices are fragrant.
* Add the diced tomatoes and beef broth to the skillet. Bring to a boil, then reduce heat and simmer for 15 minutes.
* Add the beef, potatoes, and bananas to the skillet. Continue simmering for 30-45 minutes, or until the beef is tender and the vegetables are cooked through.
* Season with salt and black pepper to taste.

2. Prepare the Cashew Rice:
* In a medium saucepan, combine the basmati rice, 2 cups of water, and the vegetable oil. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the rice is cooked through.
* Stir in the chopped cashews and cilantro.

3. Serve:
* Spoon the beef curry over a bed of cashew rice.
* Garnish with additional cilantro, if desired.

Tips:

* If you prefer a thicker curry sauce, add 1-2 tablespoons of cornstarch mixed with a little water to the skillet and cook until thickened.
* You can add other vegetables to the curry, such as carrots, peas, or bell peppers.
* Serve the curry with roti, naan, or rice for a complete meal.
* Leftover curry can be refrigerated for up to 3 days.
