Super Easy Salmon Fishcakes

Salmon fishcakes are a delicious and easy way to enjoy salmon. They can be made with fresh or canned salmon, and they're a great way to use up leftover salmon.

Ingredients:

* 1 pound salmon, fresh or canned
* 1/2 cup bread crumbs
* 1/4 cup chopped onion
* 1/4 cup chopped bell pepper
* 1 egg
* 1 tablespoon mayonnaise
* 1 teaspoon Dijon mustard
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* Oil for frying

Instructions:

1. If using fresh salmon, cook it over medium heat in a skillet until cooked through. Flake the salmon with a fork.
2. In a large bowl, combine the salmon, bread crumbs, onion, bell pepper, egg, mayonnaise, mustard, salt, and pepper. Mix well.
3. Form the mixture into 8-10 fishcakes.
4. Heat the oil in a large skillet over medium heat.
5. Fry the fishcakes for 2-3 minutes per side, or until golden brown and cooked through.
6. Serve the fishcakes with your favorite dipping sauce.

Tips:

* For a crispier fishcake, use panko bread crumbs.
* If you don't have any Dijon mustard, you can use yellow mustard instead.
* Serve the fishcakes with mashed potatoes, rice, or salad.

* Add 1/2 cup grated Parmesan cheese to the mixture for a cheesy flavor.
* Add 1/4 cup chopped fresh parsley to the mixture for a fresh flavor.
