Courgette and Ricotta Fritters with Poached Eggs and Harissa Yogurt

Ingredients

For the courgette fritters: * 2 medium courgettes, grated * 1 cup (250g) ricotta cheese * 1/2 cup (125g) plain flour * 1 egg * 1/4 cup (60ml) milk * 1 teaspoon baking powder * 1/2 teaspoon salt * 1/4 teaspoon black pepper For the poached eggs: * 4 eggs * 1 tablespoon white vinegar For the harissa yogurt sauce: * 1/2 cup (125g) Greek yogurt * 1/4 cup (60ml) harissa paste * 1 tablespoon olive oil * 1/4 teaspoon salt * 1/4 teaspoon black pepper

Instructions

1. In a large bowl, combine the courgette, ricotta cheese, flour, egg, milk, baking powder, salt, and pepper. Stir until well combined. 2. Heat a large frying pan over medium heat and add a little oil. Drop spoonfuls of the courgette mixture into the pan and flatten them slightly with a spatula. Cook for 2-3 minutes per side, or until golden brown and cooked through. 3. To poach the eggs, bring a large saucepan of water to a simmer. Add the vinegar to the water. Crack the eggs into a small bowl and carefully slide them into the simmering water. Cook for 3-4 minutes, or until the eggs are cooked to your desired doneness. 4. To make the harissa yogurt sauce, simply whisk together the yogurt, harissa paste, olive oil, salt, and pepper. 5. To assemble the dish, place a courgette fritter on a plate and top with a poached egg. Spoon the harissa yogurt sauce over the eggs and enjoy!
