Wuxi Ribs: A Culinary Delight from Jiangsu

Wuxi ribs, also known as pork spare ribs in sweet and sour sauce, is a classic Chinese dish that originated in the city of Wuxi, Jiangsu province. This dish is characterized by its tender, caramelized ribs coated in a flavorful sauce made from a combination of sugar, vinegar, and soy sauce.

Ingredients:

* 1 rack pork spare ribs
* 1/2 cup soy sauce
* 1/4 cup Chinese rice wine
* 1/4 cup brown sugar
* 1/4 cup Shaoxing wine
* 1 tablespoon cornstarch
* 1 tablespoon water
* 1 teaspoon sesame oil
* 1 green onion, sliced

Instructions:

1. Cut the pork spare ribs into individual pieces.
2. In a large bowl, combine the ribs with the soy sauce, Chinese rice wine, brown sugar, and Shaoxing wine. Mix well to coat the ribs. Marinate for at least 30 minutes.
3. Heat a large pot or wok over medium-high heat. Add the ribs and cook until browned on all sides.
4. Add water to cover the ribs. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the ribs are tender.
5. In a small bowl, combine the cornstarch and water to form a slurry.
6. Remove the ribs from the pot and set aside. Strain the cooking liquid into a clean bowl.
7. Return the pot to medium heat. Add the cooking liquid and bring to a boil.

9. Add the ribs back to the pot and stir to coat in the sauce.
10. Sprinkle with sesame oil and green onions. Serve hot.
