Tips

* For a gluten-free quiche, use a gluten-free vegan pie crust.
* To make your own vegan pie crust, combine 1 cup all-purpose flour, 1/2 teaspoon salt, and 1/4 cup vegan butter in a food processor and pulse until the mixture resembles coarse crumbs. Add 1-2 tablespoons of ice water and pulse until the dough just comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes before rolling it out.
* If you don't have any vegan cream cheese, you can use 1/4 cup of silken tofu instead.
* You can use any type of vegetables you like in this quiche. Some other good options include broccoli, mushrooms, or zucchini.
* This quiche can be served warm or cold. It is also a great make-ahead meal. Simply reheat it in the oven or microwave before serving.
