Vegan Shortbreads: A Delicious and Ethical Treat

Vegan shortbreads are a delightful pastry treat that can be enjoyed by vegans and non-vegans alike. They are made with plant-based ingredients, such as vegan butter and dairy-free milk, and have a crumbly, buttery texture.

Ingredients

* 1 1/2 cups (180g) plain flour
* 1/2 cup (100g) vegan butter, chilled and diced
* 1/4 cup (50g) caster sugar
* 1/4 teaspoon salt
* 2 tablespoons (30ml) dairy-free milk

Instructions

1. Preheat the oven to 350°F (175°C).
2. Line a baking sheet with parchment paper.
3. In a large bowl, combine the flour, sugar, and salt.
4. Add the vegan butter and use your fingers to rub it into the flour mixture until it resembles coarse crumbs.
5. Add the dairy-free milk and mix until the dough comes together.
6. Roll out the dough on a lightly floured surface to a thickness of 1/4 inch (5mm).
7. Use a cookie cutter to cut out the shortbreads.
8. Place the shortbreads on the prepared baking sheet and bake for 10-12 minutes, or until golden brown on the edges.
9. Allow the shortbreads to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips

* For a richer flavor, use vegan butter that is made from a blend of oils, such as coconut oil and shea butter.
* If you don't have dairy-free milk, you can use water instead.
* You can also add other ingredients to your shortbreads, such as chopped nuts, seeds, or dried fruit.
* Shortbreads can be stored in an airtight container at room temperature for up to 3 days.

Enjoy your delicious and ethical vegan shortbreads!
