The Victoria sponge is a classic British dessert that is loved by people of all ages. However, if you're watching your sugar intake, you may be wondering if there's a way to enjoy this delicious treat without the guilt.

The good news is that there is! With a few simple substitutions, you can create a sugar-free Victoria sponge that is just as delicious as the traditional version.

Ingredients:

* 1 cup (125g) almond flour
* 1 cup (125g) coconut flour
* 1/2 cup (60g) erythritol or xylitol
* 1/4 cup (30g) unsweetened cocoa powder
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup (120ml) almond milk
* 1/4 cup (60ml) coconut oil, melted
* 1 tablespoon apple cider vinegar

For the filling:

* 1 cup (250ml) whipped cream
* 1/2 cup (60g) sugar-free raspberry jam

Instructions:

1. Preheat oven to 180°C (160°C fan-forced). Grease and line a 20cm cake tin.
2. In a large bowl, whisk together the almond flour, coconut flour, erythritol, cocoa powder, baking powder, baking soda, and salt.
3. In a separate bowl, whisk together the almond milk, coconut oil, and apple cider vinegar.
4. Add the wet ingredients to the dry ingredients and mix until just combined.
5. Pour the batter into the prepared cake tin and bake for 25-30 minutes, or until a skewer inserted into the center comes out clean.
6. Allow the cake to cool completely before assembling.
7. To make the filling, whip the cream until stiff peaks form. Fold in the raspberry jam.
8. Spread the filling over one half of the cake and sandwich with the other half.
9. Enjoy your guilt-free Victoria sponge!

Tips:

* If you don't have almond flour or coconut flour, you can use all-purpose flour instead. However, the cake will not be as moist.
* You can use any type of sugar-free sweetener that you like. Erythritol and xylitol are popular choices because they have a similar taste and texture to sugar.
* If you don't have raspberry jam, you can use any other type of sugar-free fruit jam.
* This cake is best served fresh. However, it can be stored in the refrigerator for up to 3 days.
