Green Garlic Chutney Roast Chicken with Cumin Spiced Vegetables

Spring has sprung and we're celebrating with this vibrant and flavorful roast chicken dish. We're using fresh, seasonal green garlic to make a zesty chutney that adds a bright and herbaceous flavor to the chicken. And to complement the chicken, we'll be roasting a medley of cumin-spiced vegetables, such as carrots, potatoes, and onions.

Ingredients:

For the chicken: * 1 whole chicken (about 4 pounds) * 2 tablespoons olive oil * 1 teaspoon salt * 1/2 teaspoon black pepper For the green garlic chutney: * 1 bunch green garlic, finely chopped (about 1/2 cup) * 1/4 cup olive oil * 1/4 cup chopped fresh cilantro * 1/4 cup chopped fresh mint * 1 tablespoon lime juice * 1 teaspoon salt For the cumin-spiced vegetables: * 1 pound carrots, peeled and cut into 1-inch chunks * 1 pound potatoes, peeled and cut into 1-inch chunks * 1 large onion, cut into 1-inch chunks * 2 tablespoons olive oil * 1 tablespoon cumin seeds * 1 teaspoon salt * 1/2 teaspoon black pepper

Instructions:

1. Preheat oven to 425 degrees F (220 degrees C). 2. In a small bowl, combine the olive oil, salt, and black pepper. Rub the mixture all over the chicken. 3. In a separate bowl, combine the green garlic, olive oil, cilantro, mint, lime juice, and salt. Mix well. 4. In a large roasting pan, combine the carrots, potatoes, onions, olive oil, cumin seeds, salt, and black pepper. Toss to coat. 5. Place the chicken on top of the vegetables. Spread the green garlic chutney over the chicken. 6. Roast for 45-60 minutes, or until the chicken is cooked through and the vegetables are tender. 7. Let the chicken rest for 10 minutes before carving and serving.

Tips:

* For a more intense flavor, let the green garlic chutney marinate on the chicken for at least 30 minutes before roasting. * If you don't have green garlic, you can use regular garlic. Just use 1/4 cup instead of 1/2 cup. * You can add other vegetables to the roasting pan, such as zucchini, bell peppers, or tomatoes. * Serve the roast chicken with your favorite sides, such as mashed potatoes, roasted vegetables, or a green salad.
