Slow Cooker Brisket with Golden Ale Gravy and Horseradish Mash

Ingredients

For the Brisket:

* 3-4 pound beef brisket
* 1 tablespoon olive oil
* 1 onion, chopped
* 2 carrots, chopped
* 2 celery stalks, chopped
* 3 cloves garlic, minced
* 1 cup golden ale
* 1 cup beef broth
* 1 tablespoon Worcestershire sauce
* 1 tablespoon Dijon mustard
* 1 teaspoon dried thyme
* 1 teaspoon dried oregano
* Salt and pepper, to taste

For the Golden Ale Gravy:

* 2 tablespoons butter
* 2 tablespoons all-purpose flour
* 2 cups beef broth
* 1/2 cup golden ale
* Salt and pepper, to taste

For the Horseradish Mash:

* 2 pounds russet potatoes, peeled and cut into chunks
* 1 cup milk
* 1/4 cup butter
* 1/4 cup prepared horseradish
* Salt and pepper, to taste

Instructions

For the Brisket:

1. Preheat oven to 300°F (150°C).
2. Heat olive oil in a large skillet over medium-high heat.
3. Season brisket with salt and pepper.
4. Brown brisket on all sides in the skillet.
5. Transfer brisket to a slow cooker.
6. Add onion, carrots, celery, and garlic to the skillet and sauté until softened.
7. Pour golden ale, beef broth, Worcestershire sauce, Dijon mustard, thyme, and oregano over the brisket in the slow cooker.
8. Cover and cook on low for 8-10 hours, or until brisket is tender and falls apart.

For the Golden Ale Gravy:

1. Melt butter in a saucepan over medium heat.
2. Whisk in flour and cook for 1 minute.
3. Gradually whisk in beef broth and golden ale.
4. Bring to a simmer and cook until gravy thickens, about 5 minutes.
5. Season with salt and pepper, to taste.

For the Horseradish Mash:

1. Boil potatoes in a large pot of salted water until tender.
2. Drain potatoes and return to the pot.
3. Mash potatoes with milk, butter, horseradish, salt, and pepper until smooth.

To Serve:

1. Remove brisket from slow cooker and place on a cutting board.
2. Shred brisket and serve with the golden ale gravy.
3. Serve with horseradish mash.

Tips:

* For a more flavorful brisket, marinate it in the fridge overnight before cooking.
* If you don't have golden ale, you can substitute with another light beer.
* Feel free to adjust the amount of horseradish in the mash to your desired level of spiciness.
