Tomato Oregano Orzo with Beef Koftas

Ingredients:

For the Beef Koftas:
- 1 pound ground beef
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped parsley

- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

For the Tomato Oregano Orzo:
- 1 pound orzo
- 1 tablespoon olive oil
- 1 cup finely chopped onion
- 2 cloves garlic, minced
- 28-ounce can diced tomatoes
- 1/2 cup chopped fresh oregano
- Salt and pepper to taste

Instructions:

For the Beef Koftas:
1. In a large bowl, combine the ground beef, onion, parsley, cumin, coriander, salt, and pepper. Mix well until all ingredients are evenly combined.
2. Form the meat mixture into 12-15 small meatballs.
3. Heat a grill or grill pan over medium heat.
4. Grill the koftas for 5-7 minutes per side, or until cooked through.

For the Tomato Oregano Orzo:
1. Bring a large pot of salted water to a boil.
2. Add the orzo and cook according to the package directions until al dente.
3. Heat the olive oil in a large skillet over medium heat.
