Chetna's End of Summer Veg Curry

Packed with vegetables, spices, and flavor, this curry is a great way to use up any leftover summer produce. You can use any vegetables you like, but some good options include potatoes, carrots, peas, green beans, and tomatoes.
The curry is easy to make and can be tailored to your own taste. If you like it spicy, add more chili pepper. If you prefer a milder curry, reduce the amount of chili pepper or omit it altogether.
Serve the curry with rice, naan, or roti. You can also add a dollop of yogurt or raita to cool it down.
Ingredients:
* 1 tablespoon vegetable oil
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 tablespoon grated ginger
* 1 teaspoon ground cumin
* 1 teaspoon ground coriander
* 1 teaspoon turmeric powder
* 1 teaspoon garam masala
* 1/2 teaspoon chili powder (optional)
* 1 (14-ounce) can diced tomatoes
* 1 cup vegetable broth
* 1 pound mixed vegetables, such as potatoes, carrots, peas, green beans, and tomatoes
* Salt to taste
* Cilantro, for garnish (optional)
Instructions:
1. Heat the oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes.
2. Add the garlic and ginger and cook for 1 minute more.
3. Stir in the cumin, coriander, turmeric, garam masala, and chili powder (if using). Cook for 1 minute, or until fragrant.
4. Add the tomatoes and vegetable broth and bring to a simmer.
5. Add the vegetables and salt to taste. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.

Tips:
