Squid, Prawn, Chickpea, and Nduja Stew

This hearty and flavorful stew is packed with seafood, chickpeas, and the smoky spice of nduja. It's a perfect meal for a cold night or a special occasion.

Ingredients:

* 1 pound squid, cleaned and cut into rings
* 1 pound prawns, peeled and deveined
* 1 can (15 ounces) chickpeas, rinsed and drained
* 1/2 pound nduja, diced
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 red bell pepper, chopped
* 1 green bell pepper, chopped
* 1 can (14.5 ounces) diced tomatoes
* 1 cup white wine
* 1 cup chicken broth
* 1 teaspoon dried oregano
* 1 teaspoon dried thyme
* Salt and pepper to taste
* Crusty bread or rice, for serving

Instructions:

1. Heat a large pot or Dutch oven over medium heat. Add the nduja and cook, stirring occasionally, until the fat has rendered and the nduja is slightly crispy.
2. Add the onion, garlic, bell peppers, and tomatoes to the pot. Cook, stirring frequently, until the vegetables are softened and the tomatoes have released their juices, about 10 minutes.
3. Add the white wine and cook until it has reduced by half, about 5 minutes. Add the chicken broth, oregano, thyme, salt, and pepper. Bring to a simmer.
4. Add the squid and prawns to the pot and cook until the seafood is cooked through, about 5 minutes for the squid and 3 minutes for the prawns.
5. Stir in the chickpeas and cook until heated through, about 5 minutes.
6. Serve the stew hot with crusty bread or rice.

Tips:

* For a richer flavor, use homemade nduja.
* If you don't have nduja, you can substitute another spicy sausage, such as chorizo or soppressata.
* Add other vegetables to the stew, such as zucchini, carrots, or celery.
