Summer Fruit Crumble Muffins

Ingredients

For the muffins:

* 1 1/2 cups all-purpose flour
* 1 teaspoon baking powder

* 1/4 cup packed light brown sugar
* 1/4 cup old-fashioned rolled oats
* 1/4 cup chopped nuts (optional)
* 1/4 teaspoon ground cinnamon
* 1/4 cup (1/2 stick) unsalted butter, cold and cut into small pieces

For the fruit filling:

* 1 cup fresh summer fruit (such as blueberries, raspberries, strawberries, or peaches)

Instructions

1. Preheat oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
4. Add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Stir only until just combined.
5. Fill the prepared muffin cups 2/3 full with batter.
6. In a medium bowl, combine the flour, granulated sugar, brown sugar, oats, nuts (if using), and cinnamon. Cut in the butter with a pastry blender or two forks until the mixture resembles coarse crumbs.
7. Sprinkle the crumble topping evenly over the muffins.
8. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
9. Let the muffins cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
