Sticky Red Onion, Thyme and Crown Prince Whip with Whipped Goats' Cheese

Ingredients:

* 1 lb (500g) red onions, thinly sliced
* 2 tbsp olive oil
* 1 tbsp balsamic vinegar
* 1 tsp dried thyme
* 1/2 tsp sugar
* 1/2 tsp salt
* 1/4 tsp black pepper
* 4 oz (125g) whipped goats' cheese
* 1 tbsp chopped fresh chives
* Crown prince crackers, to serve

Instructions:

1. Preheat the oven to 375°F (190°C).
2. In a large bowl, combine the red onions, olive oil, balsamic vinegar, thyme, sugar, salt, and black pepper. Toss to coat.
3. Spread the onions evenly on a baking sheet lined with parchment paper.
4. Roast for 30 minutes, or until the onions are tender and caramelized.
5. While the onions are roasting, whip the goats' cheese in a small bowl until light and fluffy.
6. Fold in the chopped chives.
7. To assemble, spread the whipped goats' cheese on top of the crown prince crackers.
8. Top with the roasted onions.
9. Serve immediately.
