Ingredients:
For the Prawns:
- 1 pound large prawns, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup olive oil

For the Roasted Peppers:
- 2 red bell peppers, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces

For the Gremolata Toasts:
- 1 baguette, cut into 1-inch slices
- 1/4 cup olive oil
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh mint
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400°F (200°C).
2. Marinate the prawns: In a bowl, combine the prawns, garlic, olive oil, lemon zest, oregano, salt, and pepper. Toss to coat and set aside for at least 15 minutes.
3. Roast the peppers: Toss the bell peppers with olive oil, salt, and pepper in a separate bowl. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly charred.
