Onion Soda Bread with Whipped English Mustard Butter

Ingredients for the Onion Soda Bread:

- 3 cups (360g) plain flour, plus extra for dusting - 1 tablespoon (15g) baking powder - 1 teaspoon (5g) bicarbonate of soda - 1/2 teaspoon (2.5g) salt - 1 large onion, finely chopped - 1 egg, beaten - 1 bottle (330ml) of sparkling water

- 100g (3.5oz) unsalted butter, softened - 2 tablespoons (20g) English mustard - 2 tablespoons (30ml) milk - Salt and pepper to taste

Instructions for the Onion Soda Bread:

1. Preheat oven to 200°C (180°C fan-forced). 2. In a large bowl, whisk together the flour, baking powder, bicarbonate of soda, and salt. 3. Add the chopped onion and mix well. 4. In a separate bowl, whisk together the egg and sparkling water. 5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. 6. Turn the dough out onto a floured surface and knead lightly for a few seconds until it forms a ball. 7. Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper. 8. Score the top of the loaf with a sharp knife and brush with milk. 9. Bake for 30-35 minutes, or until golden brown and cooked through.
