Roast Roots Tarte Tatin with Sage and Onion Butter
Introduction
A tarte tatin is a classic French dessert that is made by caramelizing fruit in butter and sugar, then topping it with a layer of puff pastry. The fruit is then baked until it is tender and the pastry is golden brown.
This roast roots tarte tatin is a twist on the classic dessert, using a variety of roasted root vegetables. The sage and onion butter adds a savory note to the dish, making it perfect for a main course or side dish.
Ingredients
For the roasted roots:
* 1 pound mixed root vegetables (such as parsnips, carrots, turnips, and beets), peeled and cut into 1-inch pieces
* 2 tablespoons olive oil
* 1 teaspoon salt
* 1/2 teaspoon black pepper
For the sage and onion butter:
* 1/2 cup unsalted butter, softened
* 1/4 cup chopped fresh sage
* 1/4 cup chopped fresh onion
* 1 teaspoon salt
* 1/2 teaspoon black pepper
For the tarte tatin:
* 1 sheet puff pastry, thawed
* 1/4 cup granulated sugar
Instructions
1. Preheat the oven to 400 degrees F (200 degrees C).
2. In a large bowl, combine the roasted roots, olive oil, salt, and pepper. Toss to coat.
3. Spread the roasted roots in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until tender and browned.
4. While the roasted roots are cooking, make the sage and onion butter. In a small bowl, combine the butter, sage, onion, salt, and pepper. Mix until well combined.
5. When the roasted roots are cooked, remove them from the oven. Spread the sage and onion butter over the roots.
6. On a lightly floured surface, roll out the puff pastry to a 12-inch circle. Place the puff pastry over the roasted roots and press down around the edges to seal.
7. Sprinkle the granulated sugar over the puff pastry.
8. Bake the tarte tatin in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the roots are bubbly.
9. Let the tarte tatin cool for a few minutes before slicing and serving.
