Oven Roasted Sweet Potato and Courgette Tortilla

This oven roasted sweet potato and courgette tortilla is a delicious and easy way to get your daily dose of vegetables. It's perfect for a quick and healthy lunch or dinner, and can be easily customized to your liking.

Ingredients:

* 1 large sweet potato, peeled and cubed
* 1 large courgette, cubed
* 1 red onion, finely chopped
* 1 garlic clove, crushed
* 1 teaspoon ground cumin
* 1 teaspoon ground coriander
* 1/2 teaspoon smoked paprika
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons olive oil
* 6 large eggs
* 1/2 cup chopped fresh coriander
* Tortillas, to serve

Instructions:

1. Preheat oven to 220°C (200°C fan/gas 7).
2. In a large roasting tin, combine the sweet potato, courgette, red onion, garlic, cumin, coriander, paprika, salt and pepper. Drizzle with olive oil and toss to coat.
3. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and golden brown.
4. While the vegetables are roasting, whisk the eggs in a large bowl. Season with salt and pepper.
5. Once the vegetables are cooked, add them to the eggs and stir to combine.
6. Heat a little oil in a large frying pan over medium heat. Pour in the egg mixture and cook for 5-7 minutes, or until set.
7. Sprinkle with fresh coriander and serve with tortillas.

Tips:

* For a vegan version of this tortilla, use tofu instead of eggs.
* You can add any other vegetables you like to this tortilla, such as peppers, mushrooms or spinach.
* Serve with your favorite toppings, such as salsa, guacamole or sour cream.
