Quince Apple Hand Pies: A Delightful Fall Treat

Ingredients:

For the dough: * 2 cups (250g) all-purpose flour * 1/2 teaspoon (2.5g) salt * 1/2 cup (1 stick/113g) unsalted butter, cold and cut into small cubes * 1/4 cup (60ml) ice water For the filling: * 1 large quince, peeled, cored, and diced * 2 medium apples, peeled, cored, and diced * 1/2 cup (100g) granulated sugar * 1/4 cup (60ml) cornstarch * 1/4 teaspoon (1.25g) ground cinnamon * 1/8 teaspoon (0.6g) ground nutmeg * 1 tablespoon (15ml) lemon juice For the egg wash: * 1 large egg * 1 tablespoon (15ml) water

Instructions:

For the dough: 1. In a large bowl, whisk together the flour and salt. 2. Add the butter and use a pastry cutter or two forks to cut it into the flour until it resembles coarse crumbs. 3. Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough just comes together. 4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes. For the filling: 1. In a large bowl, combine the quince, apples, sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Stir well to combine. To assemble the hand pies: 1. On a lightly floured surface, roll out the dough to a 12-inch (30cm) circle. 2. Cut out 6 circles from the dough, using a 5-inch (13cm) round cutter. 3. Place a heaping tablespoon of the filling in the center of each circle. 4. Fold the dough over the filling, pressing the edges together with your fingers. 5. Transfer the hand pies to a baking sheet lined with parchment paper. 6. Brush the tops of the hand pies with the egg wash. 7. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until golden brown.
