Chikuzen-ni: A Traditional Japanese Dish

Introduction

Chikuzen-ni is a traditional Japanese dish consisting of chicken, vegetables, and konnyaku simmered in a light broth. It is a popular dish served during the New Year and other special occasions.

Ingredients

* 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
* 1 tablespoon vegetable oil
* 1 onion, chopped
* 5 carrots, cut into chunks
* 4 stalks celery, cut into chunks
* 1 can (14 ounces) bamboo shoots, drained
* 1 package (9 ounces) konnyaku, drained and cut into bite-sized pieces
* 5 cups dashi broth (or chicken broth)
* 3 tablespoons soy sauce
* 2 tablespoons sake
* 1 tablespoon mirin
* 1 teaspoon sugar

Instructions

1. Heat the oil in a large pot over medium heat.
2. Add the chicken and cook until browned on all sides.
3. Add the onion, carrots, celery, bamboo shoots, and konnyaku to the pot.
4. Pour in the dashi broth, soy sauce, sake, mirin, and sugar.
5. Bring to a boil, then reduce heat to low and simmer for 30-45 minutes, or until the chicken is cooked through and the vegetables are tender.
6. Serve hot over rice or noodles.

Variations

* Add other vegetables to your chikuzen-ni, such as shiitake mushrooms, lotus root, or green beans.
* Use a different type of meat, such as beef or pork.
* Add a little bit of chili powder or red pepper flakes for a spicy kick.

Tips

* For a richer flavor, use homemade dashi broth.
* If you don't have konnyaku, you can substitute it with tofu.
* Chikuzen-ni can be made ahead of time and reheated when ready to serve.
