Crispy Asian Salmon Stir-Fried Noodles with Pak Choi and Sugar Snap Peas

This stir-fry is a vibrant and flavorful dish that combines crispy salmon, tender noodles, and fresh vegetables. The Asian-inspired sauce adds a touch of sweetness and umami, while the crispy salmon provides a satisfying crunch.

Ingredients:

* 1 pound salmon fillets, skinless and boneless
* 1 tablespoon cornstarch
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons vegetable oil
* 1 package (8 ounces) ramen noodles, cooked and drained
* 1 cup pak choi, chopped
* 1 cup sugar snap peas, trimmed
* 1/2 cup thinly sliced onion

For the sauce:

* 1/4 cup soy sauce
* 1/4 cup water
* 2 tablespoons hoisin sauce
* 1 tablespoon honey
* 1 teaspoon sesame oil

Instructions:

1. Preheat oven to 400°F (200°C).
2. In a shallow bowl, combine cornstarch, salt, and pepper. Dredge salmon fillets in cornstarch mixture.
3. Heat 1 tablespoon of vegetable oil in a large oven-proof skillet over medium heat. Sear salmon fillets for 2-3 minutes per side, or until golden brown.
4. Transfer skillet to oven and roast salmon for 8-10 minutes, or until cooked through.
5. While salmon is roasting, prepare the sauce. In a small bowl, whisk together soy sauce, water, hoisin sauce, honey, and sesame oil.
6. Heat remaining 1 tablespoon of vegetable oil in the same skillet. Add onion and cook until softened.
7. Add pak choi and sugar snap peas to the skillet and cook until tender-crisp.
8. Drain noodles and add them to the skillet.
9. Pour sauce over noodles and vegetables. Bring to a boil and reduce heat to low. Simmer for 2-3 minutes, or until sauce has thickened.
10. Remove from heat and stir in cooked salmon.

Tips:

* For crispier salmon, pan-fry it instead of roasting it.
* If you don't have ramen noodles, you can use any type of noodles you like.
* Add other vegetables to your liking, such as carrots, bell peppers, or broccoli.
* Serve with additional hoisin sauce or Sriracha for extra flavor.
