Chef Will Bowlby's Favorite Chicken in a Pot

Ingredients:

* 1 whole chicken, cut into 8 pieces
* 1 tablespoon olive oil
* 1 large onion, chopped
* 2 large carrots, chopped
* 2 celery stalks, chopped
* 3 cloves garlic, minced
* 1 bay leaf
* 1 teaspoon dried thyme
* 1 teaspoon dried oregano
* 1 cup white wine (optional)
* 4 cups chicken broth
* 1 cup frozen peas
* Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot or Dutch oven over medium heat.
2. Brown the chicken pieces in the hot oil for 5-7 minutes per side, or until golden brown. Remove the chicken from the pot and set aside.
3. Add the onion, carrots, and celery to the pot and cook for 5-7 minutes, or until softened.
4. Stir in the garlic, bay leaf, thyme, and oregano and cook for another minute.
5. If desired, add the white wine and let it simmer until reduced by half.
6. Add the chicken broth and frozen peas to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chicken is cooked through.
7. Season with salt and pepper to taste.
8. Serve immediately with your favorite sides.

Tips:

* For a richer flavor, use dark meat chicken.
* You can also add other vegetables to your pot, such as potatoes, green beans, or mushrooms.
