Chef Tom Booton on the Inspiration for His 'All the Chicken' Dish on the BBC Good Food Podcast



In a recent episode of the BBC Good Food Podcast, chef Tom Booton shared the inspiration behind his all-chicken dish. Booton, who is known for his innovative and flavorful cooking, said that the dish was inspired by his childhood memories of eating chicken dinners with his family.

"I grew up in a family where chicken was always on the menu," Booton said. "My mom would make roasted chicken, fried chicken, chicken soup, chicken stir-fry—you name it, we ate it."

Booton said that he wanted to create a dish that would capture the essence of all of those different chicken dishes. "I wanted to create a dish that was both comforting and exciting," he said. Recipe for Tom Booton's All-Chicken Dish



Ingredients:

* 1 whole chicken
* 1 tablespoon olive oil
* Salt and pepper to taste
* 1 onion, chopped
* 2 carrots, chopped
* 2 celery stalks, chopped
* 1 cup chicken broth
* 1/2 cup white wine (optional)
* 1 tablespoon dried thyme
* 1 tablespoon dried oregano
* 1 bay leaf
* 1 cup chicken stuffing mix
* 1/2 cup chicken gravy mix

Instructions:

1. Preheat oven to 400 degrees F (200 degrees C).
2. Rinse the chicken inside and out and pat dry.
3. Rub the chicken with olive oil and season with salt and pepper.
4. In a large roasting pan, combine the onion, carrots, celery, chicken broth, white wine (if using), thyme, oregano, and bay leaf.
5. Place the chicken on top of the vegetables.
6. Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C).
7. Remove the chicken from the oven and let it rest for 10 minutes before carving.
8. While the chicken is resting, make the stuffing and gravy according to the package directions.
9. Serve the chicken with the stuffing, gravy, and any other desired sides.
