BBC Good Food Rookie Nice Podcast: Paratha with Vivek Singh

Welcome to the BBC Good Food Rookie Nice podcast, where we talk to some of the world's best chefs about the dishes they make at home. In this episode, we're joined by Vivek Singh, the chef-patron of the Cinnamon Club in London, who shows us how to make paratha, a delicious Indian flatbread.

Paratha is a versatile bread that can be served with a variety of dishes, from curries to pickles. It's also a great way to use up leftover dough. Vivek's recipe is simple to follow and produces a delicious, flaky paratha.

To make paratha, you will need:

* 250g plain flour
* 1 tsp salt
* 125ml water
* 50g butter, softened

Instructions:

1. In a large bowl, combine the flour and salt.
2. Add the water and mix until a dough forms.
3. Knead the dough for 5 minutes until it is smooth and elastic.
4. Divide the dough into 8 equal balls.
5. Roll out each ball into a thin circle.
6. Spread some of the butter on the surface of each circle.
7. Fold the circles in half, then in half again.
8. Roll out the circles again into thin circles.
9. Heat a griddle or frying pan over medium heat.
10. Cook the parathas for 2-3 minutes per side, or until they are golden brown.

Serve the parathas hot with your favourite curry or pickle.

Tips:

* For a richer flavour, use ghee instead of butter.
* If you don't have a griddle or frying pan, you can cook the parathas in a cast iron skillet.
* Parathas can be made ahead of time and reheated in the oven or microwave.
