Ingredients for the donuts:

* 3 1/2 cups (440g) plain flour, plus extra for dusting
* 1 teaspoon baking powder
* 1/2 teaspoon bicarbonate of soda
* 1/2 teaspoon salt
* 1/2 cup (100g) caster sugar
* 1 egg
* 1 cup (240ml) milk
* 1/4 cup (60g) unsalted butter, melted and cooled

Ingredients for the glaze:

* 1 cup (120g) icing sugar
* 2 tablespoons milk
* 1/2 teaspoon vanilla extract

Instructions:

1. In a large bowl, whisk together the flour, baking powder, bicarbonate of soda, and salt.
2. In a separate bowl, whisk together the sugar, egg, milk, and melted butter.
3. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
4. Turn the dough out onto a lightly floured surface and knead for a few minutes until it is smooth and elastic.
5. Roll out the dough to a thickness of 1/2 inch (1 cm).
6. Use a donut cutter to cut out the donuts.
7. Place the donuts on a greased baking sheet and let them rise in a warm place for 30 minutes, or until they have doubled in size.
8. Heat the oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).
9. Carefully drop the donuts into the hot oil and fry for 1-2 minutes per side, or until they are golden brown.
10. Remove the donuts from the oil and let them drain on paper towels.
11. In a small bowl, whisk together the icing sugar, milk, and vanilla extract.
12. Dip the tops of the donuts into the glaze and let them set on a wire rack.
