Claire: Hello and welcome to the BBC Good Food Podcast. I'm Claire Richards.

Sabrina: Hi, I'm Sabrina Gidda.

Claire: And today we're making chicken tikka masala.

Sabrina: Yes! It's one of my favorite dishes to make.

Claire: Me too. So, Sabrina, let's start with the chicken. What's the best way to prepare it?

Sabrina: Well, for tikka masala, you want to use boneless, skinless chicken breasts. Cut them into 1-inch cubes and then marinate them in a yogurt-based marinade.

Claire: What's in the marinade?

Sabrina: It's a simple marinade made with yogurt, garam masala, ginger, garlic, and lemon juice. You want to marinate the chicken for at least 30 minutes, but longer is better.

Claire: Okay, so once the chicken is marinated, what do you do?

Sabrina: You thread the chicken onto skewers and then grill them. You want to grill them until they're cooked through but still juicy.

Claire: And then you make the sauce?

Sabrina: Yes. The sauce is made with a base of onions, garlic, ginger, and tomatoes. You then add spices like garam masala, cumin, and coriander. Finally, you add cream or coconut milk to make the sauce creamy.

Claire: Sounds delicious.

Sabrina: It is! And it's really easy to make.
